Jul 04-05, 2025 — Two talented chefs from two different cultures, yet sharing a singular vision: to return to their roots and preserve the essence of their original culture within their culinary DNA. While Chef Cuong pursues Progressive Vietnamese Cuisine, infusing local ingredients and Vietnamese culture into his dishes, Chef Paul embarks on a journey to rediscover the roots of Middle Eastern - North African cuisine, bringing a fresh approach to every culinary touchpoint on the plate.
What seemed like a completely spontaneous collaboration blossomed into profound commonalities and deep connections – a one-of-a-kind partnership the two resstaurants. Each dish reflected the unique personality of its creator, while also serving as a cultural exchange, with both chefs incorporating one another’s signature ingredients into their own creations.
It was a journey of culinary creativity, layered with surprising and elevated flavors — from Stingray Liver - Bayberries, Baby eggplant - Muhammara - Pine nut, Travelly - Sour shrimp - Fig Leaves, to Nha Trang rock lobster - Fermented uni, to Squab - Molokhia - Freekeh, to sweet treats with Mango - Cococut, and Mugwort ice-cream — each course a testament to shared passion and mutual respect.
